Pineapple Lambic

Produced in association with official Creative Consultant Ryutaro Murai (previously of Pineapple Island Ale), this was "born" on November 7th, 2002. Lambic is a Belgian style of beer, occupying the "middle ground" between beer and wine. They are made with wheat malts and always contain some form of fruit (otherwise it would be known as a Gueze), most often cranberries, raspberries, or peaches. In addition to this, a certain mixture of bacteria, as well as the usual yeast, is needed to provide the proper results. Lambics have a much longer fermentation period than "normal" lagers or ales, and then need to be cellared for a couple of months before drinking. This unique beverage should be available by the springtime, in April or May.

MEAD - honey wine, the traditional drink of Kings and Poets

Most people asociate Mead with Medieval times, and it is a drink that some claim is amongst the oldest known to man. I'm not sure how true that really is, but I do know that Mead has a number of devout devotees, and despite its relative mainstream obscurity, there are a few commercially available meads out there. With official Creative Consultant Rich Moe, we decided to give this one a whirl as well. Our Mead was born on Sept 12, 2002, and will need to ferment and/or age for a good 6-8 months (or longer!) before bottling, after which it will probably need to be cellared for another couple months. Don't be surprised if it is a full calendar year before this is ready to be enjoyed!

Rich put together some "Black Mead" in early January, with plans to drink it next Christmas. This is mead with blueberries and grape juice added, giving it a deep, dark red color.
