So I created another beer. It was Friday I was sitting at work working on some syllabi for some classes and whammy, it hit me... The urge to brew a beer. I had been considering recreating my scotch ale for a while and the details of the beer fit together as i was driving home. Skull twister V 2.0 would be simpler and clearer. I would eliminate one of the types of malt and add some Irish moss. For those of you that don't know Irish moss is a agent that clumps proteins together, thus a clearer beer. I did make one more modification; I decided to increase the alcohol percent. So I added one cup of brown sugar. The original gravity was a bit high it gave a potential alcohol of about 10.5 percent. I went downstairs and the yeast is happily bubbling away. Slower then I thought it would, I wonder of the high amount of sugar is slowing down the initial fermentation? Oh well keep posted in a couple of months it will be here!
